Bromelain ( pineapple enzyme) is a pure natural plant protease obtained from pineapple fruit peel, stem and other parts by biotechnology. Its molecular weight is 33000 and its isoelectric point is 9.55. It mainly contains various components such as proteolytic enzymes. The vitality specification is expressed in GDU/g, and the highest vitality specification can reach 3000GDU/g. Light yellow-brown powder with rich pineapple aroma, bromelain is a sulfhydryl protease. Its active center is sulfhydryl (—SH), which can carry out various biochemical reactions such as protein hydrolysis. It can be widely used in food, medicine and biological industries. It can be used for beer clarification, medicinal digestion, anti-inflammatory and swelling.
